Ingredients:
500g chicken breast, cut into strips
2 cups crushed potato chips (salted, barbecue, or sour cream & onion)
1/2 cup all-purpose flour
2 eggs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
Pinch of cayenne pepper (optional)

Instructions:
Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper or lightly grease it with oil to prevent sticking.
Place the flour in a bowl and stir in the garlic powder, paprika, black pepper, and cayenne if using. In a second bowl, beat the eggs. In a third bowl, place the crushed potato chips. Crush them to a texture that’s not too fine—leave some bite-sized pieces for extra crunch.
Dip each chicken strip into the seasoned flour, making sure it’s fully coated. Shake off the excess, then dip it into the beaten eggs. Let the excess drip off before rolling the strip in the crushed chips. Press gently so the chips cling to the chicken. Repeat for all the strips.
Arrange the coated chicken strips on the prepared baking tray, spacing them out so they bake evenly and crisp up. Lightly spray or brush the tops with oil if you want an extra golden finish.
Bake in the oven for 18 to 20 minutes, flipping once halfway through. The strips are ready when the coating is golden and the chicken is cooked through.
Serve hot with your favorite dipping sauce—think honey mustard, spicy mayo, or good ol’ ketchup. For an upgrade, mix grated parmesan into your chip coating before baking. Want to use an air fryer instead? Cook at 200°C for 12 to 14 minutes until crispy and cooked through.
